September 30: The Axis Deer: Nose to Tail Wine Dinner
Executive Chef Thierry Debailleul and team will present a four-course meal featuring the Axis deer, which is widely praised as the best tasting, most tender game meat available. They will honor the whole animal by reviving nose-to-tail eating, a style of cooking in which almost no part of the animal is wasted. This practice, which dates back to at least the Middle Ages, has recently reemerged with diners finding the less loved “odd bits” are often more flavorful than the standard fare.
